"Stroopwafel" is a unique type of cookie that has been around since 1810 in its native country the Netherlands. It is a traditional daily treat for the Dutch and is mostly eaten with their morning coffee or tea.
Back in 1810 the Kingdom of Holland had fallen in crises. Interest on State Debt wasn't paid for over the previous two years. As a result the country was annexed by Napoleon and became a part of France. Times were really bad. Reason for the highly militarized new government to reduce these rates to a third of what it had been before. Suddenly the State burden of 39 million guilders per year dropped to just 13. Needless to say that many of the rich and wealthy weren't happy at all. But the middle class got hope and became empowered for new initiatives.
One of them by the name of Gerard Kamphuysen was a baker in the Dutch city of Gouda. He was confident enough in the new reality to open up a bakery of himself. Looking for a way to serve his community he tried to recycle left-overs. And that's exactly how the Stroopwafel was born.
Since the recession days in the early 19th century the Stroopwafel has managed to spread this taste of renewed optimism and therefore became popular all over the world. Although nowhere made of left-overs anymore, the double layer thin waffle, filled with a creamy sweetness is still very much representing the original.
Today they're hand-baked even as far from the origin as South Africa. This time to serve you with an unmatched delicacy and the community with the privilege to make them.
