A meal cannot be understood without bread. Bellegarde is dedicated, through its vision and its philosophy, to this simple yet primordial fact. Faithful to the food system of Southeastern Louisiana and to the methods of the past, Bellegarde high-end equipment: as succinctly put by French master baker Poilane as “retro-innovation.” A stalwart defender of local ingredients and local flavor Bellegarde will be reflexive, not reactive, in its desire to be the first and only bakery in New Orleans to employ top-quality flour. Furthermore, Bellegarde is committed to creating the infrastructure for a locally sourced and milled grain program by 2016. By fully participating in the local food system, I will seek to re-establish the links that original New Orleanian bakeries had to the peoples and lands around it.
