This is a fancy Italian steakhouse tucked in the Aria that will require a reservation if you don’t plan to wait. The service and food are exceptional, but based on the price you’re paying, it better be! Their Tomahawk even has their name seared into the bone, which was a nice touch. Drinks were well made and overall food was delicious. The steak was well made, and the pasta was cooked perfectly. Can’t complain about the food or drinks at all! Only complaint I had from my visit was the washrooms had flooded earlier and weren’t fixed. It was quite a trek to get to the nearest public washroom close to the restaurant.
Amazing experience from start to finish. Very kind host staff. I was lucky enough to sit at the bar and had Nick the bartender take care of me. You’re greeted with Parmesan baked bread and pickled vegetables. I ordered the carpaccio which was incredible. And had the staple spicy rigatoni and meatball. I would definitely go back. Must have reservations. Plan ahead and enjoy yourself. I’ll be back next time for the pork chop. Mando as well is an incredible server. Thank you guys for everything!
Great Italian Restaurant with incredible service, food and ambiance. A bit hard to find on the second level of the resort. I recommend the spicy rigatoni and the lobster ravioli as mains and the layer cake as dessert. The complimentary bread was the best I ever had in the US. The wine selection is huge as well. We had a blast of an evening. Reservation one month before highly recommended.
Located on the second floor of the Aria, I visited this restaurant with a few friends and we made sure to reserve ahead of time, as it's quite popular. We had high expectations, comparing it to its sister restaurant in New York. As soon as we stepped in, we were impressed by the overwhelming ambiance and design. The open space and well-spaced tables allowed for a pleasant dining experience where we could see and be seen. We decided to order and share as many dishes as possible, including the famous spicy vodka rigatoni, tortellini al ragu, puttanesca spaghetti, veal parmesan, and Dover piccata. While the most popular dishes aren't always the best, overall we weren't disappointed, except for the veal parmesan, which was a bit soggy in my opinion. The standout dish was the tortellini, rich in flavor and perfectly cooked. Surprisingly, the rigatoni, their best seller, didn't leave a lasting impression on my taste buds. Be prepared to spend around $120 per person on average excluding alcohol.
This is one of my favorites restaurants in Vegas, food is amazing and service was great! Ryan took amazing care of us. We were also celebrating our anniversary and from the moment we arrived we were congratulated. We had the octopus, the carpaccio, lobster ravioli, vodka rigatoni and lemon cheesecake and we loved everything!
One of best place in Vegas for sure delicious food, nice music makes the atmosphere incredible and service was perfect. At the beginning was some misunderstanding with hostess somehow it was a big trouble for him to find an outlet for my charger but guys in the bar are the best! Solved all the problems in one second amazing experience. I would highly recommend to try Carpaccio it was something I will comeback for
Carbone is a dining experience. You'll want to make sure you have reservations and ensure you have about 2 hours available for dining. The staff is incredibly friendly and attentive. The food is all very good but that beef carpaccio is life changing. The balance of that dish is pure perfection. I cannot stress enough that it alone is worth the price of admission and I'd order it again in a heart beat. The spicy rigatoni and veal Marsala were both great.
My experience at Carbone Italian Restaurant in Aria Las Vegas was a blend of anticipation and letdown. The restaurant, known for its popularity and the need to reserve in advance, sets high expectations. The staff were commendably friendly, contributing to a lively and welcoming atmosphere. Our order included an array of dishes, with four different types of pasta such as spaghetti and ravioli, and notably, the charcoal ribs. Unfortunately, the culinary experience didn't live up to the hype. The pasta, while presented well, lacked the authentic, rich flavor one would expect from a reputed Italian establishment. The most disappointing part of our meal was the charcoal ribs. The meat tasted dry, reminiscent of being reheated in a microwave rather than freshly prepared. This was a letdown, especially considering the high prices and the restaurant's prestige. In conclusion, while Carbone has a great vibe and excellent service, the food was a disappointment, especially given the anticipation and cost. It's an okay spot for a night out, but manage your expectations when it comes to the dining experience.
We were very much looking forward to dining at Carbone for the first time since Covid. Food was excellent - especially the spicy rigatoni vodka they’re famous for. Their chefs are wonderful. Toward the end of dinner, we asked about limoncello and how this was something we got at the end of dinner in our previous visits. Our server said “we don’t do that anymore it cost the restaurant too much money.” We were kind of surprised and then he suggested “I’ll get it for you”. The bill came next. We asked to do a room charge. The ability to charge to the room went down. Technology. Sometimes this happens. They asked for our credit card to pay. With a bill totaling $800 for the two of us, we were hoping to apply our dining credits to the dinner. But without a room charge, we didn’t understand how this would happen so we asked. Our service captain said we just go to the mlife desk and they’ll fix it. This didn’t sound right to us… and the last time we were at the Aria was during the cyber hack - so we were skeptical of this being the down process for this and about tech in general. We asked the managers name who could confirm this for us. He did not give the managers name and was extremely unhappy we were pressing the issue. We pressed again. while he doubled down, the manager Johnny was walking by - the service captain called him over. Johnny confirmed this was the process. We voiced our confusion over how this would work - and he assured us that the rewards desk would be able to handle it and this happens “all the time”. We paid. We left. We went downstairs to the mlife desk and told them what transpired. They were bewildered and said “this doesn’t happen all the time” and that “we can’t just comp restaurants that way. This is up to them to handle the payment and transaction.” We were stunned. The two managers gave us their names. We asked what to do and they said we needed to talk to the restaurant. So. We went back upstairs. We asked to speak to Johnny. We told him what the desk told us. He did not seem surprised. He said he would try to refund the charge tomorrow and charge it to the room. He did follow through with this. The charge was eventually placed on the room. I’m not the best writer: so expressing these events in words is challenging. But what made this situation so infuriating to us was the gaslighting that occurred in the restaurant. We voiced our concern of what would happen - which is what DID happen and the service captain and manager lied directly to our faces to move us along and make us someone else’s problem. Ultimately having us running around the resort looking for SOMEONE to help us. We will never return to Carbone. Our fond memories of the place are gone. It’s been 3 days and we are STILL angry about this experience and how pathetic Johnnys “customer-no-service” approach to management ruined the dinner we had been looking forward to for months…. And came close to ruining our entire trip overall. But we will try to not give him that much power. And just as a last note, : in the end we never got limoncello.
The servers were fantastic! Great ambiance. The Caesar salad is fantastic. The spicy rigatoni vodka and lobster ravioli were delicious.Food: 4/5
