With their new restaurant Concourse, Chefs Lon Symensma and Luke Bergman are creating innovative cuisine that celebrates the quality, flavor and spirit of Colorado. Open for coffee service, lunch, dinner and weekend brunch, the seasonal menu showcases the best local produce, wild forages and organic, pasture-raised meats from the chef’s favorite farms. The two highly acclaimed chef’s use classic European techniques and skills culminating from years of training throughout Europe and at some of New York City’s most notable restaurants. With a warm, intimate and casually sophisticated interior, Concourse is a feast for the eyes as well as the palate.
