Stretch the noodle is a good truck that serves hand pulled noodles! And they are so good! You get a meal that is good for 2 people in my opinion.. I couldn’t finish it in one sitting.. I would definitely return

Perfectly cooked, spicy and flavorful. The servings are HUGE, definitely could have split one order and been happy. Definitely will come back here.

Stopped by today and ordered the Biang Biang noodles. Portion size is huge, it'll probably last 3 meals. Noodles taste great. Only warning is that when they say spicy, they mean SPICY. I'm good with spice but these are crazy!

The best fresh made biang biang noodle in Portland! The noodle is chewy texture and perfect with spices I ordered spicy, spicy lover recommended! The pan fried pork-shrimp dumping is juicy and crispy. This food won’t let you down!

It was my mission to stop at this food cart when visiting Portland. The homemade noodles and the overall dish are AMAZING, spiced perfectly I did request mild and it still had quite a bit of kick, so be cautious if you’re not into spicy!

Quite delicious, well priced, fast we were there at 2:50 on a Thursday and the lady was very nice. The vegan dumplings were incredible. My partner really loved the other noodle dishes.

This is one of the best food carts in Portland. Be prepared for a 10-30 min wait depending on the time of day. The portions are so big that I suggest splitting the Caio Mein between 2 people. Also, it’s all best eaten hot!
