Originally from the district of Moore Town in the parish of Portland, Jamaica; Chef Mike began cooking at an early age. Mike comes from a long line of cooks and his family recipes and traditions have been passed down from generation to generation. His mother, Islyn, was a great inspiration to him and taught him almost everything he knows about cooking. He's had years of experience creating and re-creating recipes and has discovered his own unique cooking style. In the early 90's he opened The Royal Maroon Carryout with his wife and his mother. This small family business started off selling primarily produce, whole-foods, and health food items and has developed into a well-known carryout restaurant throughout the City of Baltimore.
If you ask Chef Mike what the greatest part of his job is, he will tell you "Cooking, but most importantly serving and getting to know my customers because at the Royal Maroon we treat you like family".
