Story

We incorporate four distinct concepts: Eatery, market, bakery and catering, serving breakfast, lunch, and dinner for dining-in or taking-out. Like our European counterparts, The Bindery focuses on the craft of cooking, by combining the market and bakery with an elevated fine dining experience under the same roof.

The marketplace will offer the best to-go food in the area, as well as small-batch house-made artisanal products. The café will serve up everything from unique baked goods and fine coffees to delicate desserts. The cuisine can be enjoyed in the eatery, or in the warmth of customers’ homes. For customers who want to dine in, special attention will be given to shared plates from an ingredient driven menu, in addition to the Market's daily take-out menu. A small selection of craft beers, wines and specialty cocktails will also be available.

Located at the border between Denver’s Lower Highland and Lower Downtown at 1817 Central, The Bindery is reminding Denver locals that in our fast moving times, convenience should not exclude attention to detail, nor pride in food. Linda invites you to embark with her on a journey back to the roots of food culture while embracing the momentum of the urban lifestyle.

The food was delicious. Staff was attentive but not overly so. We came out for a girls brunch and really enjoyed our time there. I highly recommend a Vanilla Oat Milk Latte and the polish dish for brunchFood: 5/5
Been wanting to visit this place for a while. It’s beautiful. However, it must have been a “bad day” for me. Service and food were not to my expectations. I wish I would have had the experience of a 4 or 5 service stars like in the reviews. Server took a while to get our order, brought my plate with COLD food! Saw my drink sitting at the bar for more than 10 mins. Drink was nothing but vodka with a tad taste of espresso. When I asked if my food could get warmed, it came back without my fork and a missing item chimichurri sauce fork took forever so I stole my sons. Definitely not a good experience for a hungry person, specially during the weekend. Glad I tried it. Good luck if you come here. Definitely not coming back
Went for brunch and had a espresso and the Emmabella, was really delicious! Really nice and lively seating, place was packed. Dutch pancake is popular but not for me. Would definitely come back!Food: 4/5

We got the rabbit pot pie which is seriously to die for. The ribs were cooked perfectly as was the lamb osso buco. Yummy oysters, very good truffle fries. They have big portions sizes. This restaurant is definitely worth trying!! Brunch addition review- the Dutch Baby “I’ll never want another pancake again” is truly off the mark. It’s an eggy, soggy mess. Maybe it means you will never want anything resembling a pancake again because it’s so bad. It’s like really not good. I took pictures of the before Dutch baby and then the after gross guts of it. My husband says that the pancakes at Denny’s are better than this and that he wouldn’t eat the Dutch baby again if it were free. I was looking forward to this for weeks and it is definitely something I never want to try again. The four stars is for the dinner experience we had, the one star is for brunch. We just ordered the only terrible things on the menu. It’s an expensive mistake I hope I’m saving you from.
The Bindery is popular for brunch but their dinner menu is honestly where it's at. Took my best friend for a birthday dinner. Entire experience was phenomenal. We shared a bunch of dishes and a couple cocktails and every single one was a uniquely wonderful composition. Beautifully prepared, amazing textures and flavors, and thoughtfully delivered so we never ran out of table space and transitioned perfectly from one dish to the next. Truly a wonderful experience. Have someone you want to impress who likes to experience new dishes? 10/10 would recommend.
Incredibly delicious food! Hard to decide what to order because everything sounded fantastic! The bakery inside was yummy and made the entire place smell delightful! Can't wait to return. The fries were INCREDIBLEFood: 5/5
We had the Dutch Baby Pancake 5/10 and Carbonara 10/10. Wouldn’t get the Dutch Baby again just not to our liking but we’ll be going back for that amazing carbonara and to try the rest of the menu. Our server was very patient and took his time to educate us on the menu.Food: 5/5
I really like the small plates here. Ceviche, ribs, octopus. But really it's all about the smoked rabbit pie. This might be my favorite small plate anywhere in Denver. It's unique and scary good. A must try for anyone visiting. Holding it back from a 5 star are the mains. For me, they've just never been able to capture that lightning in a bottle with the larger plates that they have with the smalls. Either the ingredients are portioned wrong, the flavors are more conservative, or the cook isn't quite there. Worth a try, but I'd make it a small plate tapas sharing experience.
There's nothing better than starting the day with a delicious breakfast at the bindery. I highly recommend the place. Doelicious dishes from the breakfast offer, fantastic coffee and their pastries. I especially recommend the blueberry and blackberry scone. The place is beautifully decorated. The service was ok.Food: 5/5
