The Laboratory Catering is a local catering/food retail business based out of Union County,NJ. All creations are made by The Mad Scientist himself Chef G! We are an asian bbq fusion, specializing in braised meats.
It all started with Chef G, in his earlier stages of his career he acquired the nickname "Mad Scientist" from customers and co-workers. He grew onto the name and started The Laboratory Catering LLC in 2014. After working in banquets his first half of his career, he knew catering was something he can manage. After doing small local gigs with the catering, he knew he was ready for the next step. Since the start of his culinary experience back in 2005, he knew always wanted a food truck, before it became super popular. So the following year he built a food truck from scratch. With the help of his Sous Chef at the time Brett Byars. That was the birth of the The Lab Foodtruck. After months of building it was ready for its debut in 2016. The 2 knew that it was their time. The main goal was to offer an amazing unique menu that was easily executable and affordable. The Mad Scientist figured that they should specialize in braised foods (pork, porkbelly, shortrib, chicken, brisket) and also make a signature drink. Since that was something they did at the restaurant they were working at that time. So with the base idea they created a variety of items from tacos, sandwiches, platters to specials. It was a huge success and customers loved their creations. The signature drink is their twist on a traditional fresh squeezed lemonade by adding honey and ginger to it. Little did they know that they created a monster hit. Customers raved about the drinks and they started getting known for their drinks and short-rib tacos. As the foodtruck started getting more popular the 2 knew that they need to be fully committed to it bc it was hard working a regular job and juggling the foodtruck on the side. So in 2017 the two fully committed and took on any event, catering, festival gig they can get with the food truck. Things were going really good as they were getting busier and busier, gaining more street popularity. Then in May 2017, The Mad Scientist came across a unique offer onto opening up a restaurant in a landmark location. It was a giant leap of faith, but the opportunity was great. So he signed the lease and the 2 quit there other jobs and worked the food truck full time all summer while slowly building the restaurant up. It was a hard transition and the restaurant needed numerous updates, and just life. So all summer they would be on the food truck promoting the upcoming restaurant and finally after months of non stop work, they were ready to open doors on October 21st, 2017.
