(May 2017) Meet our Executive Chef! A New York native, Chef Peter Palumbo was raised by a Sicilian family in which "meals were the pinnacle of every day." Finishing high school & looking for a career, he paid a fortune teller $1 in search of answers. After the palm reading, the psychic predicted his future as a Chef. Following his advice Palumbo landed a spot at the one of the world's top culinary school, the Culinary Institute of America. After apprenticing at the iconic Fontainebleau Hotel in Miami, Palumbo went on to cook for the former president George H.W. Bush, the Grateful Dead & foodies from all over the world. Having traveled from the Caribbean to Africa to Scandinavia, Palumbo eventually settled in Boston. With nearly thirty years of practicing his culinary craft, he has taken up residence at the South End's Trophy Room, which is located in the Chandler Inn Hotel. Of his transition from a restaurant with a capacity of 600 people to one of 100, Palumbo says he's excited to get "back to the craft" [of cooking] and be able to "get more personal with food again." Emphasizing the freshness of locally-grown produce & seafood, he claims as long as he has the ingredients on hand, he will make you "whatever you want or feel like having." When you taste his handmade Brooklyn-style Sicilian sausage, you can feel his passion for food and nostalgia for his family's history.
