Annie's Kitchen is a home based processor of a simple gluten free oat flour snack cake that sells retail at participating stores.
Annie Cakes is a recipe that was developed as I finished the Culinary Arts Program at Southern Maine Community College in May of 2012. My home kitchen is certified by the Agriculture department of Maine to bake and that is what happens! I bake gluten free oat flour snack cakes with healthy simple ingredients in the morning and late evenings when I am not working at HB Provisions in Kennebunk, ME.
I try to use the best ingredients that I can within my budget. As of current I am using small Maine blueberries, gluten free oat flour from Saskatchewan, Canada, only baking soda as the leavener, cage free eggs, applesauce from apples grown in the Northeast, bananas, semi dark chocolate chips, frozen fresh raspberries and blackberries, butter, sugar, molasses, walnuts, raisins and spices. I label all my snacks with the ingredients so you can make good choices for yourself.
Gluten Free Oat Flour is safe for many people to eat. However, there are some people with celiac who are still sensitive to even gluten free oats, so please check with your doctor if you have any reservations. That being said, oat flour is wonderful for you as it digests slowly and allows you to feel full longer, helping you to control your appetite and get lots of great fiber and vitamins into your body!
