Cortez Bottarga was founded by a group of local fisherman in an effort to sustain their way of life and preserve it for the livelihood and enjoyment of future generations. We are confident that with the pristine waters of the bays and inlets surrounding Cortez Village, that we are able to produce the worlds finest striped grey mullet Bottarga in the world. Our fish are caught using hand-thrown cast nets and their golden roe is immediately processed and cured, to ensure optimum freshness and quality.
