Early Bird Restaurant is the result of the dream of a husband and wife chef team, who envisioned a world-class chef-owned and operated food establishment that offers a big city vibe, amenities and sophistication, yet offering small-town comfort, familiarity and friendly service. Chefs Daniel and Kristen Cofrades will utilize organic, sustainable ingredients and support the local farms and community to bring a fresh, creative, and flawlessly executed breakfast, brunch, and lunch fare at an attractive price point. DK Concepts Incorporated was founded in January, 2012 with the goal of filling a void in the Westminster community—a locally owned and operated food outlet catering to business leaders, singles, retirees, couples, and families alike, to bring a unique and gourmet experience to the local community, without having to go outside of Northwestern Corridor of Denver.
The name, Early Bird was inspired by the Chefs’ daughter, Isabel, who was born prematurely at 33 weeks. “Izzie” is the beautiful, pint-sized muse behind the restaurant’s concept and philosophy of providing the best ingredients, preparation and presentation that is good enough for their own family, why not yours? Early Bird Restaurant…come ‘n get it!

This was our first time here.   I was searching last night for the best chicken and waffles    and Early Bird Restaurant came up.  I told my husband we need to have Sunday breakfast here.  We got there thinking we would have to wait a long time.  They are set up well and organized. The wait was only 15 minutes. I did not know you could make reservations. Next time, I will do that, The wait staff was so friendly and prompt.  Now on to one of the best breakfasts we have had in a long time I had the chicken and waffles!! Wow, that was so good.  It came with a bonus bowl of gravy with sausage and bacon.  My husband had the loaded pancakes.  I have never seen pancakes so big and beautiful, full of fresh fruit, and also came with bacon  !!  I would definitely recommend this place if you are looking for an amazing breakfast.  Thank you so much for a wonderful experience!!

Excellent local breakfast spot with a strong menu of delightfully prepared comfort food. Best dirty chai I've had in Colorado. Also, delicious breakfast burrito, excellent chicken & waffles, and the chicken fried chicken is awesome too. They also make a pretty great homemade biscuit, and the country gravy is delicious. Great service, friendly staff, and awesome atmosphere. Just finished my 3rd meal here in the past few months and it was great.

Early Bird is a cool little coffee shop / cafe that serves a brilliant breakfast and brunch. The inside of the restaurant is nice, cook decor. It has what looks like some big, nice pictures of a kid, giving the vibe of a welcoming family owned place. A bar that faces the kitchen where they cook and they offer a wide variety of coffees and cappuccinos. We got the breakfast nachos, which were homemade chips covered with green chili, Pico de Gallo, sour cream, and scrambled eggs. I added the crispy fried chicken as well. And it was terrific. The chile is a little on the runny side for my liking but was extremely flavorful! We also had the La Jefe. A pulled pork and ham smothered waffle. The pork was tender and juicy with a tangy bbq sauce that accented the maple syrup drizzle extremely well. The waffle was a little dry. It could have used a little more syrup or butter to moisten it up more, but overall, it was so good!! A nice place to try for breakfast or brunch. I know I'll be back to try some of the other things I saw on the menu that sounded amazing! 9/10

We went to Early Bird Restaurant for brunch on Memorial Day on our way from Boulder back to Denver. This was our first time in this area.  While the parking spots were all occupied in the front, there was some space on a side street on the next block.  We were lucky to get a table pretty quickly. There was a table available on the back patio behind the building.  Our server was friendly and quick to take our order. To our surprise, there were no alcoholic drinks available no Mimosas or Bloody Mary's, which we were hoping to have. We settled for coffee drinks instead, which turned out delicious.  The food we ordered was absolutely stunning. The pulled pork beni was incredible, and I highly recommend giving it a try. My wife had the burrito, which was not any less delicious.  While we missed alcoholic brunch drinks, we definitely had a great brunch experience with great food and service.  Kid-friendliness: Highchairs were available as well as a kids menu with good options.

The presentation of build your own eggs and the taste was better than the Belgium waffle. Soft scrambles texture was a good suggestion from the wait staff. Really surprised by the biscuit and potatoes. The homemade jam wasn't too bad.Food: 4/5

When you come here, you will find large, delicious servings of well-made breakfast meals in a cozy, busy space. I have been twice. The first time was on a busy weekend morning when the space was filled with customers and buzzing with energy. My second visit was on a more quiet weekday morning. Both times the food was delicious, the service was prompt and personal, and the experience as a whole was enjoyable. I had the huevos rancheros - very good, exceptionally good in every way - but I missed having refried beans. Please note: that's a very small caveat for an otherwise splendid dish. The next time, I ordered the "Do You Have a Burrito" breakfast burrito, which was massive and very tasty. One of the staff told me proudly that everything is made from scratch at the restaurant... except for the sour cream. The sausage, for example, was perfected over time by the head chef/cook and is created according to her recipe by a nearby butcher using local ingredients.  As I considered my experience at this restaurant - oh, the roasted potatoes were perfect - the phrase "esprit de corps" came to mind. Now, I thought I know what it meant, but I wasn't absolutely sure, so I looked it up. Merriam-Webster says: "the common spirit existing in the members of a group and inspiring enthusiasm, devotion, and strong regard for the honor of the group." I did feel that was a part of my Early Bird visit. There was a spirit among the staff that was enjoyable, almost as enjoyable as the delicious food.  Kid-friendliness: Inside the front door are crayons and coloring pages for kids. Beyond that, there are kids at many tables, enjoying their food perhaps even more than the adults.

Creative breakfast/brunch/lunch options. We have eaten here twice. Everything is excellent. Had a bite of hubbies chicken fried chicken and think it could be the best I've ever had!Food: 5/5

The food here is SO GOOD! The flavor of the biscuits and gravy are the best I've had in Colorado and they are well organized that the wait times are so fast too. The staff is friendly and the restaurant manager is always on top of things  It keeps me coming back for more!Food: 5/5

Way better than First Watch. The manager added an arugula and tomato and avocado salad to my scrambled eggs. Hot sauce is homemade. Potatoes were oven roasted and not greasy. Worth the trip!!

THE WAFFLES. Writing this review makes me want these waffles right now. I got the Jefe which is their corn cake mini waffles covered in carnitas and two eggs and some delicious sauce. The not too sweet savory plate hit the spot. My wife got their Cobb Wrap which was solid came with some delicious potatos and I don't know if they make their own hot sauce but it was the right heat 3.5 out of 5 on the heat scale and slightly sweet. Services was quick and very personable. And the environment was like fun modern diner. I wish I took a better picture of the waffles to do them justice.
