Chefs Mark Snell and Shannon Wilson as the owners and operators of Fusion French Quarter Catering Company and Private Chef Services are dedicated to provide our customers with the most creative, delicious culinary experience possible.
Chef Snell spent 17 years studying many different cultures and a variety of international foods while living abroad in Japan, Korea, and the Philippines just to name a few. He competed and won the title of Iron Chef in the 2008 in the Sysco International Iron Chef Competition in Eugene, Oregon.
Chef Snell is accomplished at pairing food and wine and was a judge at the Greatest of the Grapes food and wine competition at Seven Feathers Casino in 2010.
Mark is also a master in the art of Sushi.
Chef Shannon has spent many years perfecting down home comfort foods, tantalizing desserts, baked goods, and candies and has been studying international cuisine under the instruction of Chef Snell since 2011.
Our team includes Smoke BBQ master Brian Wilson who uses his talents with flame, grill. His special marinades and rubs create tantalizingly delicious smoke BBQ meats and burgers.
Our youngest member of the team is Dalton Wilson who helps with whatever is needed.
Our food is always beautiful to the eye, delicious to the taste, and made with love.
Our menu includes not only a variety of international culinary delights, but also offers the best in down home comfort foods and BBQ all prepared by Mark, Shannon, and Brian with love especially for you.
We do offer professional private chef services, catering for small private weddings, private parties, and private events.
