Our mission is to provide the U.S. and beyond with the most authentic gelato and sorbet, made using only the finest quality ingredients and using fresh fruit, spices, and herbs. The tradition of gelato in Italy is deeply ingrained in their history and we would like to share that with the world by spreading awareness of gelato and sorbet, the nutritional value, and the difference with traditional ice cream. Gelato has about 1/3 of the fat, most flavors are gluten free, and it has much less air in the product than ice cream. Air that is added into the product is called 'overrun'. Ice cream typically has 100% overrun, meaning that half of what you're eating is air. Gelato is a much more dense dessert, with about 30% overrun, so the flavor is more rich and the serving size is much smaller because you are getting much more gelato than air. All of our sorbets are fat free, dairy free, and gluten free and they are made with fresh fruit (up to 40% fresh fruit)!
