Gravy is as old as tradition and as new as tomorrow.
I'm Dee Dee Saracco, and Gravy is my way of sharing my family's handmade, homemade recipes with you. I produce authentic Italian sauces, soups and bread, always cooked from scratch, using the freshest ingredients, sustainably sourced whenever possible.
Gravy also offers catering services, as well as special items that change every week.
I began to cook as a young girl. It started at my Mom's kitchen table, where I watched her cook for everyone. I inherited her passion for cooking naturally, but I learned her honest, old-fashioned methods the traditional way-first, by watching, then by doing. No cheats, no shortcuts! Mom taught me to do it the right way, because it's the only way.
So I've taken her wonderful recipes, and added a contemporary flare, extraordinary ingredients and no small amount of love.
Cooking has always been my passion, and now I want to share that passion, and the delicious results, with you and your family!
What We're Making For You.
Gravy produces Bolognese Sauce, Vodka Sauce, Tomato Basil Sauce, a variety of soups, and Italian breads.
The soups we make will vary from week to week, and season to season. Some of our favorites are Chicken Meatball Soup, Chicken Noodle Soup, and a healthy and hearty soup with escarole, beans and sausage. One of the breads we offer is a remarkable, savory Italian Sausage Bread.
It isn't particularly Italian, but you won't want to pass up our Turkey Chili.
Add some rotating prepared items like lasagna and it'll seem like Sunday night at Nana's EVERY night!
Cook's Tip: The Versatile Meatball.
Sauces from Gravy make your home cooking easier, and maybe even a little better. Because of the way we make our sauces, your meal is still from scratch!
One great companion to our meatless sauces is meatballs. We love meatballs--they are so versatile. You can use one meat or several. Vary the herbs and you've got a completely different meatball
There are just a couple of rules to remember. Master them, and you'll be surprised at what you can make. And meatballs freeze well, so you can make them when you have time, and then have a delicious mid-week meal with tons of taste and ounces of effort. What are the rules?
A pound of ground meat should make enough meatballs for 4 to 6 servings.
Beef, turkey thigh, veal, pork-all make wonderful meatballs. Beef and veal, beef and pork, almost any combination can be great. Remember not to make them too lean; meatballs are a lot like sausage that way. Ideally, your meat blend needs to be 20 to 25 percent fat.
All-meat meatballs tend to be dry and dense. Breadcrumbs help to lighten them, but even better is a slice or two of stale bread, crusts removed, soaked in milk and crumbled up.
Saute aromatics like minced onion and garlic in a bit of oil until soft. Let the mix cool down, and add to the blend.
Use 1.5 tsp. of salt for each pound of meat.
Mix and form the meatballs with a light hand. Overmixing makes dense, heavy meatballs
Saute in oil over medium heat, or bake until they have a nice crust. They freeze well.
