Wood-Fired artisan bakery. We bake naturally fermented sourdough breads and pastries using a large amount of local organic flours and grains.
We incorporate a long, cool, fermentation to all our baked items. This long cool fermentation increases nutritional benefits by breaking down minerals into beneficial nutrients. It also pre-digests gluten which makes it easier to digest and creates bread with a lower glycemic index.
We use stone-milled, organic, traditional, heirloom grains and flours that are sourced locally from NY state.
We source local and organic products whenever possible and use sustainably grown products from our own farm whenever they are in season.
We bake in a wood-fired oven helping achieve the "perfect crust" which are almost impossible to achieve in a conventional oven!
