We produce bread, that is stretched with the correct amount of precision and care, folded ever so gently, and treated with the upmost care. Carefully watched and listened to. It will tell you when it is time, BELIEVE ME! :)
Then, off to the baking stones, in a self created steam oven (like the professionals do), baked to a golden crisp and then off for the world to enjoy.
Of course, we do not have the equipment like the mass producers do, so we create our own steam hearth oven the old fashioned way. It is an intense and sometimes not so joyous experience, but, nontheless, the end result is always well worth it.
