About

Description

History
After high school, I spent a year studying, and enjoying amazing pita, while living in the Old City of Jerusalem. Ever since that time, I've dreamed of creating a venue where I could share that same pita here in Seattle.

After countless hours and experiments, I feel I am now ready to start sharing the same amazing pita I had in the Old City of Jerusalem those many years ago.

About Pita
If you've had pita from the US, you probably associate pita with dry, thin, tasteless diet food. Real pita is thick, moist, has a huge pocket, and slightly toothy on the outside and chewy on the inside. It can be filled with anything or is great for dipping. Pita is the staple bread of the Middle East and is served with every meal. Locals can buy high quality pita from the neighborhood market, always made fresh each day (although it freezes well, it is best the day it is made).

Ways of enjoying Pita
Pita can be enjoyed by filling with Humus, vegetables, meats, chicken, banana and peanut butter... you get the idea. Anything you'd think of putting between two slices of bread or on a bagel is going to be better in a pita. Great pita creates a large pocket that can be stuffed with goodness and does not tear. Unlike sliced bread or bagels, your goodies won't fall out and drop into your lap. (Okay, the legal department is getting nervous about the above claim… be aware that pouring half a cup of sauce into a pita will still make its way onto your lap. There. You’ve been warned ;-)

Please share!
You get the idea: I am really crazy about pita. But enough about me, please share your pita dinners and lunches with Old City Pita so others can see your fantastic creations.
