I had Papas BBQ for the first time today from their food truck and honestly I was pleasantly surprised; I haven’t found much good BBQ in the Hagerstown/Martinsburg area, most of it is mediocre, so I wasn’t expecting much. I ordered the “half rack” baby back rib combo which ended up being 5 bones. My go-to is dry spare ribs and these were wet baby back but they were delicious. Perfectly cooked not over-cooked “falling off the bone” for once!, very tender with the perfect amount of “bite” and pull from the bone and just a bit of bark on the outside. The sauce was sweetened just enough to make it finger-licking good. I chose the coleslaw and potato salad sides, both of which were well portioned. The coleslaw was vinegar based, crunchy and very good. Potato salad was mustardy and creamy with just enough small chunks of potato to make each spoonful a delicious bite. Both were perfect for my tastes love that vinegar!. It came with a small cornbread muffin which was just ok; it tasted dry and pre-made. Would prefer to see an actual square of homemade cornbread to go with this combo, that would really set the whole meal off. For $17 total I feel that I got a helluva great meal at a great price, best BBQ in the I-81 area so far. I couldn’t even wait to get home to eat, I finished in the car.
