Poulette Bakery has its origins in France where two pastry chefs baked together on
their night shifts.
Desiree Di Falco and Maxime Rossetto first met with their hands dusted in flour
at Ladurée, the renowned Parisian pâtisserie. They both started their careers in
different directions: Desiree at Law School in Venezuela, her home country, and
Maxime, born and brought up in France, in Literature at La Sorbonne in Paris. But
the joys of baking led them to graduate from pastry schools, Desiree at Le Cordon
Bleu in Paris and Maxime with Boulangerie and Pâtissier-Glacier-Chocolatier-
Confiseur diplomas.
Desiree has the talent of an artist and the precision of a scientist: paying meticulous
attention to detail on the design of each special occasion cake gained from over two
years with Ladurée.
Maxime gained wide experience working for Michelin starred restaurants and
Master Craftsmen in France: desserts at Joel Robuchon’s restaurant in the UK and
the Relais Gourmand Da Vittorio in Italy, pastry baking at La Pâtisserie des Rêves
and Ladurée, bread making at Anis Bouabsa’s bakery (voted Paris’ Best Baguette in
2009). He learned how to mix creativity and precision to attain perfection.
One dunks their croissant in their morning coffee, the other not. Both
complement each other perfectly. Poulette Bakery is the first-born child of their
marriage and they are pouring all their passion into nurturing it… - a true love story!
