Pollo al Barro: Gandmom´s recipie, full chicken seasoned with a mix of dry chiles and cover in clay, is cooked in wood oven for five hours; this excellent dish would feed 4 people, is served with guacamole, frijoles, salsa y tortillas.
Chiles en Nogada: The chile en nogada is a traditional Mexican dish made with poblano chiles stuffed with a mixture of meat and dried fruits, covered in walnut sauce, and garnished with pomegranate seeds and parsley. It is said that this dish was invented in the 1800s by nuns in the town of Puebla.
