Wow. This place is sooooo good. The sandwiches are packed with flavor. July 10, 2022 Update 2nd visit We got to come back! Moved some road trip plans around and a lunch spot opened up in Carbondale and we just _had_ to return. I went for the Veggie Sandwich and added an egg and subbed the hash browns for salad. Very delicious, and again, so much flavor. The ciabatta bread is fantastic and almost had a focaccia soft texture to it--perhaps cause of the sauces and butter and toasting method. Husband tried the Turkey Club and really liked the blueberry-balsamic sauce saba. The change he would have made is to add greens to it. Added prices to photo descriptions cause I found it a tad entertaining that there was a couple who sat next to us, but left without ordering anything because they felt that the prices were too high cause of the add ons. I get that in some places, but not here as the base price for each sandwich/item is quite low and the add ons allow you to customize your order. That couple totally missed out on the flavor that the sandwiches are packed with. July 9, 2022 first visit I had the BLT with aioli on the side and subbed the hash browns with a salad. The salad was so flavorful with the light but bit spicy dressing and the peas and leeks. Loved it! Bread is delicious. Just an all around make-your-tummy-feel-good experience. My husband loved the caramelized onion so much he didn't even let me taste it. His only sadness about them was that there weren't more of them. He also had the BLT + avocado, but subbed the spicy aioli with regular. The hash browns have both regular and sweet potatoes - unique and delicious. Now I wanna try the veggie sandwich that is currently being served with poblano peppers and I'd totally add an egg on top. But, sadly, not here enough days to revisit. FOOD "ALLERGY" NOTES Heads up to those who can't do spicy. Most items are, but it can be adjusted. Just be sure to ask questions from your server. Such as the aioli on the BLT is a spicy chipotle that they can easily sub for a regular. The menu doesn't specify type of aioli. The dressing on the salad is also spicy. For me this is all fantastic. Sadly, for my husband we have to circumnavigate spicy food anything with capsaicin is a no go for him.

There homemade bread and pastries were amazing. Healthy food choices. Home style feel. I had matcha latte with oatmilk it was delicious. Recommend this place for healthy lifestyle enthusiast. Hope to pass through again.

Good, healthy, and unique food creations that you will inspire. However, the coffee is not of high end quality. If you are not a coffee enthusiast, it won't be a problem. My suggestion is you skip the coffee but dive deeply into the food, especially their cashew muffin! So amazing.

Loved it. Its important to start the day off on the right foot, and Silo CP helps you do so. A small and cozy gem, we came upon it after reading up on locals' recommendations. It did not disappoint. While portions are smaller than what we are accustomed too and more along the lines of what we should be eating, the quality ingredients and flavors extend beyond the plate. The boys each had the breakfast burrito while my wife went with the thick cut french toast with raspberry compote. I ordered the daily special which was a French omelette served in a cast iron skillet along with a side of hash browns for the family to share. Service was perfect. Setting was comfy and clean. Wait for our food was minimal. Pricing was par for the quality of food and venue. We highly recommend Silo if you're driving through town and looking for a memorable meal.

Exceptional good, friendly services, affordable, and made from scratch eatery. I ordered pairs and very salad and both were very well prepared, and delivered on the promises of an excellent meal. Highly recommend for a quick Solo lunch or a great family brunch.

Great spot for breakfast! Loved the breakfast burrito with sausage make sure to ask for hot sauce.

So delicious! Small space so not good for a large group. We had brunch and the food was amazing. Ingredients were fresh and delicious. To top it off enjoyed a great bloody Mary too!

What a perfect way to start my day! Piping hot chai and fluffy french toast, eggs and sausage. Banana bread to go was my afternoon snack. Will be back!!!

Silo is kind of tucked into a hidden spot in Carbondale so don’t miss when driving by! This is not fast food, this is great local food prepared right. Guaranteed to fill you up! Come with time to enjoy the views of Mount Sopris.
