Description

Naturally-leavened, hand-crafted breads and pastries - baked in a wood-fired masonry oven. We use a wide variety of whole, sifted, and white flours, always focusing on quality and distinctiveness of taste. Rye, spelt, various Heirloom wheat varieties, corn grits and flours, buckwheat, malted barley, wheat, and rye - we love it all.

All of our grains are organically grown (some certified, some not), from Maine Grains, Moulins de Soulanges, Nitty Gritty Grains, and Peterson Quality Malt.

We procure dairy and produce for our enriched breads and pastries from even closer: our own gardens and forest, those of our neighbors, and nearby farms.

The wood-fired, naturally leavened process and the quality of our ingredients sustains a local and food-based economic cycle, and it creates a deeply nourishing product with a distinctive aroma, crust, and depth of flavor, which we are excited to share with our community.
