We will be a small in home bakery specializing in sourdough breads, pastries and small batch specialty sauces. All products will be made to order.
In this " instant age " we want things now, no waiting. Unfortunately it seems to come at the cost of loosing some of the culinary and baking arts and traditions of our ancestors. We strive to embrace and utilize those practices in our breads nd pastries. No commercial yeasts are used and ingredients are natural, organic, and locally sourced, ( as much as possible ). Currently we have sourdough cultures from 10 countries.
Our sauces are my interpretation of tastes and recipes I have experienced in my travels across our country. I use various salts in my recipes for the breads, sauces, and dry rubs. Hawaiian Red Sea Salt, Brittany Grey Sea Salt, Black Sea Salt, Himalayan Pink, Baleine Sea Salt, Mediterranean Sea Salt. We also smoke the salts that we use in the rubs and sauces as well as making our own liquid smoke. We also smoke the jalapenos and pablanos to make our own chipotle and ancho spice powders and adobo sauce.
No GMOs' artificial sweeteners, and no high fructose corn syrup is ever used in any of our products.
All breads and pastries are made with one of the following sourdough starters;
San Francisco, Italian ( One from Ischia Island and on from Camaldoli ),Tasmania, So. African, Russian, Finland, Yukon, Austrian, Poland, and Giza. Any bread or pastry can be produced using any one of these cultures. The only difference is the intensity of the sourness.
Breads and pastries;
Jalapeno Cheddar, Cinnamon Raisin, Yukon Gold Rush, Borodinsky Russian Rye, Glazed Cranberry Nut, San Francisco, Italian White, Tasmanian White, Polish Caraway, Jewish Rye, German Caraway/ Fennel.
Pastries/ Cookies
Cinnamon Apple Pie Caramel Sticky Buns, Cinnamon Rolls, Cranberry Nut Muffins.
Cookies;
White Chocolate Chip Macadamia Nut, Chocolate chip. Heath Bar Macadamia Nut, Cranberry Nut.
Sauces include;
So. Bourbon, So. Western, Korean Sticky Rib ( good with any protein ), Teriyaki, Jamaican Jerk, Whiskey Steak sauce, White Wine Citrus Marinade.
Dry rubs include;
So. North Carolina Mustard Rub, Carolina , Asian Dry Rub, and So. Western.
All sauces are packaged in glass mason jars and include 1/2 cup of the appropriate dry rub.
