The Cookery's DoughNation is a mobile extension of The Cookery Restaurant in Dobbs Ferry, NY, serving wood-fired Neapolitan pizza throughout Westchester and the Hudson Valley. Launched in 2012, the food truck's mission is provide sustainable, fun, serious food from the heart at an affordable price. It only made sense that Chef David DiBari and The Cookery took their love for doing the same on the road.
Chef DiBari has always had a passion for the pizza of Naples. Ever since his late Uncle Chubby built a wood-fired oven in the backyard of their family house, he's been playing with fire, literally. The harmonious interaction between a natural wood fire, three simple ingredients used to create the perfect blistery dough and instinctive technique can be explosive.
The DoughNation truck is a handcrafted wood burning oven designed to deliver artisan pizza from its 900 degree flames. The oven sits atop a trailer and travels to farmer’s markets, large festivals, and private parties throughout Westchester and The Hudson Valley every week. DoughNation spins puffy, Neapolitan rounds topped with The Cookery’s tender, hand- made mozzarella and uses fresh, seasonal produce from its farmer’s market route.
