The Nashville State Community College (NSCC) Culinary Arts program prepares students for careers as chefs and culinary professionals in a variety of hospitality businesses.
NSCC Culinary Arts students receive training in the basics of cooking and baking and are given the opportunity to learn through theory and practice. Students learn the principles of sanitation and safety in a food service facility, basic knife skills, cooking methods, ingredient identification, vegetable, starch, meat cookery and fundamentals of the professional bake shop. In addition, students study the principles of menu planning and development, food cost and purchasing.
Students may chose to pursue an Associate of Applied Science (A.A.S.) in Culinary Arts or a Culinary Arts Technical Certificate. The NCSS Culinary Arts A.A.S degree can be completed in two years and requires a total of 60 credit hours of coursework including two 300-hour paid internships. The NSCC Culinary Arts Technical Certificate requires 21 credit hours of coursework including one 300-hour paid internship and is considered a non-degree, one-year program.
