My name is Niki Guinan, and I operate Victory Cakes out of my home in Marriottsville, MD.
In 2003, just a year after meeting my husband, he developed a rash that would not go away. Little did we realize then that the annoying rash would lead to a Celiac diagnosis that would further lead to a calling.
Celiac diagnoses can be overwhelming and disappointing when you realize the things you'll have to forgo. I love food, so I began experimenting. And I had some tasty results.
After our first child was diagnosed with Celiac disease and knowing that our other will more than likely develop it as well, I began to exercise my creativity to build the custom gluten-free cakes of their dreams.
After several nudges from my family and friends, I decided to finally make the leap into this new venture. Try out my cakes, cupcakes, pies, and cookies. No one will ever know they're gluten free!
