WHAT’S IN A NAME…
Living with food allergies means having to ask every person who cooks for me whether the dish is ‘Wendy Friendly’. In my freezer, food I can safely eat is marked with a large ‘WF’ for ‘Wendy Friendly’. What does ‘Wendy Friendly’ mean? It means food free from gluten, dairy, yeast and grain… in other words…‘ it’s safe for me to eat ’.
MY STORY…
In my early 30’s, allergies forced me to go completely Gluten and Dairy free. “But I LOVE sandwiches. Bread is so darned convenient.” As I’ve since discovered, there are alternatives but they sometimes taste like cardboard or are loaded with empty carbs.
After years of doing without, I finally discovered a healthy alternative… raw vegetable wraps.
When I moved to the Sunshine Coast of British Columbia, I couldn’t find a bread substitute that was ‘Wendy Friendly’. There was no way I was going back to ‘doing without’… I love to cook, so I decided to make them for myself.
And I did…
I bought an Excalibur dehydrator and started playing. After months of tinkering with flavours and experimenting on friends, I finally hit on a recipe that people liked… a lot! They began telling me “you should sell these down at the Roberts Creek Farm Gate Market”.
And I did…
They were popular there too. With some minor tweaks, that Original recipe became the flavour we now call “Carrot & Sweet Red Pepper”.
