I have been involved in the pub and restaurant industry from my early twenties. I took on a challenge around this time to renovate and manage my own pub, running this operation smoothly and successfully. I managed various pubs and restaurants before completing my Chef Diploma at The Prue Leith School of Food and Wine. This opened up the doors for me to explore the Hotel industry. Having a strong foundation working in 5 star Hotels, both in al a carte and buffet service, gave me an advanced knowledge of the smooth running of kitchens. During this time I had opportunities to interact with important public figures including Jimmy Carter, Will Smith, Bill Clinton, Quinton Tarantino, Kofi Annan, Tim Robbins and my highlight, Nelson Mandela. Combining the above with facility management skills from working on remote sites catering from 30 – 200 people, I am able to offer you strong advice and tools to make your business a success.

I cover the areas of storage and kitchen with optional extras of menu and staff.
Each visit in all packages will include the following:
Storage – Assessment, report, suggested active tools
Kitchen – Assessment, report, suggested active tools
Front Of House - Assessment, report, suggested active tools
Staff (up to 10) – skill observation, report, suggested improvement tools
Prep and service – observing preparations and service, report, suggested improvement tools.

We work very closely with Conscious Cuisine, using free-range, hormone and antibiotic free, grass fed meat (for meat classes). Free range eggs. Dairy from humane sources. Himalayan salt is our salt of choice. Where ever possible, we use organic fruit and vegetables , organic/fair trade wine and organic dry produce. We recycle organic and synthetic materials as much as possible.

Our fun filled, informative and interactive cooking classes cover theory and preparation of meats, poultry, vegetables, salads, sandwiches, starches, to name a few.
