Nicky USA is the premier wholesale butcher & purveyor of specialty game & high quality meats in the Northwest. This year we are celebrating our 27th year in business. Owner Geoff Latham, a graduate of Oregon State University's Agricultural Business Management School, founded the business in 1990 and started out by selling rabbits from the back of his Ford Escort hatchback to a few eager chefs. Some of our earliest supporters included Philippe Boulot, Cathy Whims, Vitaly Paley and Greg Higgins, chefs who were all leaders in the local, seasonal farm to fork Northwest food movement.
We now have a team of 60 employees, including a full service USDA butchery & processing facility, and carry over 1000 items & cuts curated for the most discerning chef, food service and retail customers. While we still take great pride in the specialty game that we sell, we are a full-service meat distributor with great lines of beef, pork, chicken and lamb. In many cases we have multiple offerings of these items to suit any menu option and price point.

We maintain our own USDA processing and production facility as part of our main warehouse in Portland, OR. Our Plant Manager/Master Butcher and his skilled staff can custom cut a wide range of meats to meet the needs of our clients. Having a processing facility in-house also gives us the flexibility to better serve our customers and the ability to make quick changes to the production schedule if necessary.
Our sales staff is dedicated to providing professional service tailored to meet your needs. We understand that food service and restaurants are fast-paced environments & menus change often, in fact many of our sales people come from a restaurant & culinary background making them ideal for helping you find the right product for your kitchen.
Using the latest in inventory & invoicing management software, our warehouse and delivery staff is able to pull your order with increased efficiency. We strive to process your order quickly & deliver it accurately so you have more time in the kitchen and not on the phone.
While selling meat is our primary business at Nicky USA, we also strive to reach beyond the traditional sales relationship with our customers & community. We actively support and promote our chef, industry and retail partners at numerous events and fund-raisers including The Chef In My Garden Series (benefiting Growing Gardens) and the raffle at our signature event, Wild About Game.
We are proud to work with The Portland Kitchen as our cornerstone non-profit partner to support their mission in setting the table for successful futures by using food & cooking to teach life skills and healthy disciplines to underserved youth. We have worked to raise funds and awareness for this great organization through various methods including in-kind meat donations, benefit dinners, and our Chef Beer Series with Gilgamesh Brewing.
Over the last two years, beginning in 2015, with the support of generous restaurant, retail and vendor partners we raised over $30,000 for The Portland Kitchen. We have renewed our commitment to TPK for 2017 and look to raise even more funds this year.
We also sponsor the Fare Start program in Seattle, an organization that works for a real solution to some of our society's most pressing challenges—homelessness, joblessness, poverty and hunger. They help people transform their lives, create value for the community, and offer a way for everyone to play a role doing something that matters.

Nicky USA owner Geoff Latham has been involved with rugby since his college days when he played with the club team at Oregon State and has always championed the growth and advancement of the sport. Both of his sons share his passion for the sport, and his youngest son is now involved with Rugby Oregon and Geoff is active in coaching his team. At Nicky USA we believe rugby exemplifies the best values of sport & life - teamwork, honor, integrity, strength, service, and family.
