Baja Gringo Tacos is a SW Michigan based food truck specializing in naturally gluten free authentic and gourmet tacos with a fresh, west coast flair.
It is our goal to use the freshest and cleanest ingredients we can source. The 100% corn, naturally gluten free taco shells we double stack and the 100% corn chips we fry ourselves daily are manufactured in Michigan by El Milagro. The corn they use is grown in Mexico, which means these products are non-GMO. We’re very proud of that. The vegetables used in our fresh, hand diced salsas (salsa fresca…pico de gallo…) will be locally sourced when available. When the avocados are nice and ripe and fresh guacamole is available, we’ve mashed them for you ourselves, squeezed in fresh lime juice, chopped fresh cilantro and onions, and we’ve minced fresh garlic, that day. Any fish, when available, will be wild and NOT farm-raised. And we use hormone-free, preservative-free, and antibiotic-free, all natural meats. We have limited storage space, limited prep space, and limited cooking space. For these reasons, our menu changes daily and will continue to do so. We are still working out some of the kinks and processes we use on the truck, including adjusting to our space constraints.
Hey Friends! It’s Chef Audy...the truck has been pretty active, even in these early cool Fall days. As we go through the slow ownership transition, we’re still putting out great Mexican inspired food.
However, we will be slowly changing the menu to a more contemporary plates theme. Embracing cuisines from across the world. Sourcing as many local and sustainable foods as possible and adding an expanded Vegan menu featuring the foods of Chef Audy and Souls Ground Foods.
