Description

VistaVino – the perfect name for the latest offering by seasoned restaurateurs Janine and Michael Glennon. Their love of food, wine and stunning scenery brought both to Colorado in the 1990’s. Michael and Janine met at highly regarded Sweet Basil restaurant and moved together to local favorite, Montauk Seafood Grill where they were soon working as executive chef and restaurant manager. In 1999, they took their skills to Avon, Colorado where, at the foot of Beaver Creek, they opened Vista Restaurant. Their motto of “Good Food, Nice People” quickly gained them a loyal following. They moved to the Country Club of the Rockies renaming the restaurant, Vista @ Arrowhead (www.vista-arrowhead.com) in 2007 which they still operate.

Michael and Janine’s passion for great food and good wine along with their emphasis for friendly people has recently found renewed energy in Castle Rock. VistaVino sets the latest stage for Michael’s creative cuisine combining influences from around the world with a Tuscan focus. The views are now of Castle Rock, Janine carefully selects the wines, the food is better than ever; all are served with confidence and care.

We stopped in for the first time, and I’m EMPHATIC about this place! Our new fave Castle Rock restaurant and there are so many good ones to choose from. We sat outside and the ambiance was lovely. Had the pasta purses for appetizer and we knew it was off to a great start. The lobster ravioli was dreamy and the bison bolognese… killer. We couldn’t stop talking about how happy the food made us. And the service! Felt truly cared for - a level of service that was top of its class. This is why you come here :
My wife and I recently moved to Castle Rock and landed on this spot for a celebration dinner with her sisters joining us. As soon as we walked in the door Chef Ignazio greeted us with his warm and welcoming energy. He seated us at the chef’s table which gave us a great view of all the food coming out of the kitchen. All the food looked amazing. We ordered four dishes: Chianti Braised Short Ribs Hyplains Heritage 90 Day Aged Ribeye Chilean Sea Bass Tortellini Pesto The portioning was excellent, not too much and definitely not too little. I do not like any kind of fish or seafood but because the other three dishes were superb I gave the Sea Bass a go and it was delicious. I will eat fish again if it tastes like that. Every plate was balanced perfectly and the flavors hit all the right spots. Our desserts were: Cheese cake Tiramisu Chocolate cake Raspberry moose Again, everything was perfect. Light yet full of flavor for each. Chef Ignazio and his staff were very personable and made all of us feel at home and welcome. My wife and I will most definitely frequent this spot.
Vista Vino Modern Grill in Castle Rock, Colorado is incredible! The food was delicious and the service was excellent! Hyplains Heritage 90 Days Aged Ribeye-Tri-color roasted fingerling potatoes and grilled asparagus. Chianti Braised Short Rib-Sriracha honey glazed baby carrots, spicy Hatch chili smashed Yukon gold potatoes, Chianti demi-glace. Chilean Sea Bass-Chilean sea bass baked and basted with herbs and butter served over Aborio rice and quinoa mixed with seasonal vegetables. Tortellini Pesto-Tri-color cheese tortellini served with our own pesto cream sauce and fresh basil. Calamari-Loligo squid, Peruvian mini sweet peppers, imported parmesan, marinara. Baked Clams Oreganata-One dozen fresh east coast clams baked with Italian seasoning bread crumbs with a splash of white wine golden brown.
It had a really nice vibe. The food was good. The service was excellent, our server was Vicky and she was an awesome waitress. Expensive, small portions but very tasty.
Nice quiet dinner around 8 pm on a weeknight. Crab cakes, ravioli dishes, wine, and Limoncello cake were all excellent, as was the service. Very pleasant experience, and we’ll be back!!Food: 5/5
This was my first time dining here at Vista Vino grill. WOW! The chef, Josh Moore, did an exceptional job on our dinner. We had the lamb chops and the short ribs Sadly we forgot to take a pic of the appetizer, bread and main dish… but check out our yummy desserts. We will be coming back!!!
It’s unfortunate that 5 stars is the top rating, our visit at Vista Vino was amazing. The food was a culinary experience that satisfied, and our favorite server Sam was quite entertaining as usual. Thank you Vista Vino, for the excellent food and wonderful memories! Raymundo and family.Food: 5/5
Extremely friendly staff and the food was the best in town. The owners made us feel welcomed and went above and beyond to to make our experience a grand one. Would definitely recommend anybody to pay them a visit! Don’t forget to make a reservation because they have plenty of guests that love their food as much as we did.
Went last night and it was terrible. We had reservations for 6:30 and were not seated until 7:30. We sat at our table for 20 minutes before I got up and had to ask for menus. It was chaotic. They overbook their restaurant and the staff becomes overwhelmed. It's a shame because the food is good but the service and experience was terrible. When we got our bill all they did was comp an appetizer!
Food was delicious and staff was mostly friendly, I had my extended family with me which meant 3 younger kids & though they have kids menus and crayons, they don’t provide boosters or high chairs. It is a lovely quaint environment for a date night or girls night, not anti kids but good to know they try to encourage an adult audience, understandably so with a quaint dining area. I love that you can enjoy seeing the sous chefs prepare the meals. Would love to go back on my next visit!
