Came on an afternoon and were amazed at the ramen as we haven’t had good ramen on the east coast. We got the shio special, which was a tonkotsu soup base that was so good! The broth was extremely flavorful and the noodles cooked to perfection, everything was perfect! We also got the shoyu ramen which was a chicken soup base, this was the first time I truly appreciated the shoyu which added so much flavor to a great soup! The noodles were thicker with this ramen. We were not full after these too so we got the maze soba, which was a dry noodle that was really good as well and the tobasco sauce was truly freshening! We loved how simple the ramen were, highlighting the ingredients and the craftsmanship of the chef.
The best ramen in the region, which has a lot of competition. The options are often diverse and always excellent, with extras such as wonton, egg, and extra noodles being well worth it. Come early if you can, but it's worth the wait if you get stuck in line.
I ordered pork shoyu special with extra noodles, and it was just amazing! The noodles are al dente and it tastes like some old fashioned china-ramen that you can find somewhere in Tokyo. I believe that only handmade curly noodles can achieve such an exquisite taste in a bowl of clear broth. The chashu slices have a very exotic flavor compared to traditional ones, probably because they are made by cooking torches rather than braised in a pot as a whole roll. Overall I would say this ramen house is definitely an overkill for ordinary ramen lovers. For those ramen maniacs like me, you will never be disappointed here!
Really good ramen. Got the maze soba and pork shoyu ramen. They were delicious. The broth was flavorful and the pork was nice and tender. The maze soba doesn’t have a broth but rather a thick garlic sauce that’s absolutely amazing. On top of all that the staff were super friendly. It was great.Recommended dishesMaze Soba
Very good ramen, first the broth is not heavy but well seasoned, I personally liked that they use chicken stock instead of pork bone ones to give a more clean tasting profile. Then the chashu is by far the best I’ve had around Boston, 2 large pieces and not overly fatty, they torch the skin right before serving, giving it a nice smoky flavor. This would be my new go to ramen place around the neighborhood.
Update: love their new Dan Dan ramen. The ramen here is good, high quality and rich broth. Nice location and very clean and spacious interior. I’m more of an udon person so I admit I’m biased. Tried the shio salt and shoyu soy sauce ramen and both were a tad salty for me personally. I think they are understaffed since the wait time was ~30min for 2 bowls. In addition to line up outside.
Ordered the shoyu and shio, I am happy with the I ordered from this place so far. Pork is nice, bamboo shoots were decent, noodles were great, and the soups were not too salty and thick, just right.Food: 5/5
It was super busy tonight, but the wait was worth it! A steaming hot bowl of rich Miso Paitan Ramen with an onsen egg on top is the perfect meal after a long day. The chashu pork slices were tender and seared to bring out that extra flavor. The noodles were pulled perfectly for that firm chew I love. And the broth was heavenly like always! I savored every last drop, and am ready to go into a full food coma immediately after this review. 10/10 will be back. Gochisousama deshita!
Very limited menu as a while and a single vegetarian/vegan option. Don't expect much veggies in your bowl. A lot of noodles and soup though. They charge a dollar extra for making the vegan ramen spicy, but it was still very low on the spice. There are several better places with lower prices in and around Cambridge. There were a lot of Japanese people, so it's probably more authentic. But, i have had better tasting ramen in Cambridge.
Good selection of ramen and they clearly care about their menu/food. Tried the mazesoba special. The chives and bamboo shoots were the stars even though the chashu portion was generous. The sauce was creamy and umami.Dine in: YesOutdoor seating: No
