Campbell Meats, a whole-animal Butcher Shop & Charcutier serving the Lower Hudson Valley, is scheduled to open in the Spring of 2016. All our products will showcase the bounty of The Hudson Valley's small, sustainable farms and it's artisanal purveyors. Located on Cedar Street in Dobbs Ferry, Campbell Meats will serve retail customers and wholesale buyers of Westchester and beyond; and be a fixture at farmer's markets in the Rivertowns.
We believe the highest calling of a Butcher is to ensure that every ounce of the animal is put to use. This is of utmost importance not only to run a profitable business, but to fully honor the life of the animal and the work of the farmer. This is achieved through careful fabrication with minimal waste and by introducing the consumer to unfamiliar cuts and providing them with the know-how to prepare them properly. The Charcutier is of equal importance, serving as the last line of defense against waste by turning the most intimidating bits and pieces into delicious pates, terrines and sausages. Campbell Meats will set itself apart from any existing butcher in Westchester and beyond by offering a unique and impressive array of house-made charcuterie far superior to any competitor.
