My name is Nicole. For most of my life I’ve been cooking food for my family. I’ve spent numerous hours researching and reading books to teach myself about living a healthier life. One in particular was a book called “Green Smoothies Revolution” by Victoria Boutenko, which completely changed my life. For the past six years, I’ve been making green smoothies every morning. I love drinking green smoothies and I’m committed to drinking them for the rest of my life. Green smoothies have increased my energy level and made my thinking clearer. I continued doing research and created a menu for anyone who wants to live a healthier, happier, and more fulfilling life. I know Americans eat food high in fat, sugar and heavily processed food, and not enough fresh vegetables, fruits, seeds and nuts. Food is the best medicine and everyone can improve their health, prevent illness, and live longer by eating healthy food rich in vitamins, minerals and amino acids. I created the menu myself which includes: no sugar, no dairy, gluten-free, organic vegetables, fruits, homemade dressings, antibiotic-steroid free meat, and cage-free eggs. After creating the menu I felt confident enough to open my Green Healthy Cafe for people who want to eat healthy and feel great. The menu has been created from the heart and is for everyone: vegetarian, gluten-free, dairy-free, sugar-free, and green-raw smoothie drinkers.
