Hello. My name is Dawn Draper and I am gluten intolerant. I have not yet been diagnosed with Celiac, but I have cut out anything that contains gluten from my diet because of symptoms that I was having that led me to believe I had a problem digesting gluten properly. For a couple of years, I was not feeling real well in my stomach and exhibited severe bloating in the stomach after eating. My daughter had recently been told she was intolerant. As I was speaking to her one day, after I had a severe stomach ache and bloating episode after eating a wrap containing wheat, my daughter advised me that the symptoms I was having were very similar to what her symptoms were after eating food containing gluten. She challenged me to cut out all gluten from my diet for two weeks and see how I feel. After only 1 day, I could tell the difference. When I did not eat food containing gluten, all of my stomach aches and bloating went away. As soon as I eat a product containing gluten, within 15-20 minutes my stomach takes on a bloating effect that makes me look 5 months pregnant. So, after enough times with dealing with the stomach aches and bloating, I decided that was just not worth eating food with gluten in it.
It was not easy for me to change to an all gluten diet because I am a baker and cook, and all of my recipes, of course, used to call for regular white, wheat containing flour. So, as you can imagine, I felt like I might as well throw years of recipes and cooking in the garbage, and I didn't know how I was going to eat, especially my favorites like pizza and grilled cheese sandwiches. After a few weeks of trying to eat gluten free, I started looking at some of my old recipes and begin thinking about how I could bring my old recipes back to life with alterations to make them gluten free. It was not as impossible as it seemed.
My purpose is to share with friends and family the recipes I have gathered and altered, whether or not you are gluten intolerant or celiac, these are much healthier than eating processed pre-packaged foods, and I want to share information on news about healthy foods and how to prepare these foods in every day life.
Throughout the years, I have learned to substitute many ingredients for more healthy and nutritious alternatives, so changing most of these recipes to gluten free, although some more challenging than others, has not been completely impossible. I also try to use fresh seasonal ingredients when cooking or baking. For example, when I bake Peanut Butter Cookies, I use my homemade peanut butter versus a store brand. I save approximately 15+ ingredients in my yummy cookies by substituting it with my peanut butter that contains only 3 simple little ingredients.
