"Tapas" is derived from the Spanish verb tapar, "to cover".
Tapas is a centuries-old tradition in Spain & part of the fiber of Spanish life. According to legend, the tapas tradition began when King Alfonso X of Castile recovered from an illness by drinking wine with small dishes between meals. After regaining his health, the King ordered that all wine must be served with a small snack or "tapa."
The concept for these delectable, appetizer-like foods springs from the long gap between lunch and traditional Spanish dinner. In Spain, friends regularly gather at tapas bars after work to gossip, argue, talk sports or just meet before going home for dinner. A communal culture, where tapas are beautifully presented and quickly replaced as samplings are taken is an integral part of Spanish culture.
