The taste and flavor are that of a disillusioned and uninspired chef. Service is good but majority of the food was disappointing. From their obsession with salting everything from sprinkle of coarse salt on perfectly made dinner rolls to heavy handed salting of the fish. Flavors were meh and unexciting. Seriously you are supposed to be at the Mecca of culinary experiment’s—do better. It appeared that the students preparing the meals had no oversight.
Great menu with a wide assortment of offerings for any type of palette. Student staff is knowledgeable about the menu and diligent with their service. In order to taste as many items as possible we each ordered an appetizer, entree and desert to share. You will not be disappointed - 10/10
I visited this restaurant on a Thursday for lunch for my sister’s birthday at noon. It was my first time and I was not disappointed at all. Everything was so delicious. From the drinks to the appetizers and the main course. Highlights: shrimp and grits, pork belly and grilled octopus all were phenomenal. For entrees we had the short rib and the lamb chops. Flavors on point, meat was so tender it melted in your mouth. I definitely want to come back. Shout out to our server Eduardo. He set the perfect example of great customer service. My experience was extremely memorable.
The advice I was given prior to trying this restaurant from a friend was to be adventurous. I am glad I did. The students at this institute are very creative and allow your dining experience to be exceptional.Food: 5/5
The CIA Culinary Institute of America in Hyde Park, Ny is an absolute gem. It is a Culinary college where all the students are learning to be maîtres D’s , chefs or pastry artists. Everything is student run so your waiters and chefs are all current students. It is elevated cuisine served to the highest of standards. The students, from front to back of restaurant are striving their best to impress and as a result the lucky diners get competent, knowledgeable, friendly waitstaff and absolutely fresh, hand & homemade cuisine & desserts to a 5 star level. Whole experience is old style where you are greeted and treated as valued guests while the food is very much au courant. There are 3 main restaurants : Caterina De Medici Italian , American Bounty, and La Bocuse French . All 3 are extraordinary in their physical setting, their service and of course the scrumptious food. The campus is magnificent with beautiful buildings, sculptures, follies,and swoon worthy views over the Hudson River. They are open for both lunch and dinner and truly any one, or all 3 restaurants are a do not miss experience for those in the know. Attached photos below are from our recent lunch at American Bounty.
Dining at American Bounty is fun. We love chatting with the service staff who are about to become chefs or culinary administrators. Our server, was a delightful young man from Sunapee, New Hampshire. He has the perfect personality for a career in hospitality. The set up of the restaurant is tastefully furnished with lots of space between tables - just how we like it. We really enjoyed the Peanut Celery Soup, the crab limoncello ravioli and Privia’s Single origin Chocolate cake. The Mushroom, leak and kale pot pie was tasty but over salted. The service was highly attentive. A five star meal for sure.
Despite living in the city the past 10 years, I still consider myself a life-long Hudson Valley resident. At one point, I used to drive past the Culinary Institute of America twice a day for almost 2 years, and somehow I never went to one of their restaurants. That all changed this week. A group of four of us dined at the American Bounty Restaurant. I had heard such great reviews from coworkers, that I needed to check it out. It definitely lived up to the hype. I was impressed that it was almost all students. Our server explained that they are members of a class of 60, and they rotate through the restaurant. They work so many weeks as servers, pastry chefs, and then finally in the main kitchen itself. The food was delicious and plated to perfection. I couldn't get enough of the gumbo ya-ya I was even sopping it up with the dinner rolls at one point. I also commend myself for choosing their brewed-on-campus Summer Ale. I've never had a beer taste so fresh and crisp. My entree was a pork "Porterhouse" that was not only delicious, but was enough of a meal to take some home for the next day. Everyone at the table seemed happy with their choices, and we all commented that we'd like to come back and try one of the other restaurants.
This was an amazing experience from start to finish. It started with a complementary starter course that was bursting with unexpected flavors, and then every appetizer, entree, and dessert we ordered for the table was outstanding as well. But the real stars of the show were the students staffing the restaurant. With the wall-sized window into the kitchen, we could see how all the food was being prepared and the work that goes into the art of cooking! The front of house staff provided exceptional service, and our server was gracious enough to tell us about the way students are trained to learn different aspects of restaurant operations. Even if Poughkeepsie is a bit of a drive for you, this is an experience worth going out of your way to try!
So much fun visiting the CIA. Love the gift shop, fountains, views & interesting displays up and down the hallways. We had reservations at American Bounty for a Mid Hudson Food & Wine Society dinner. We were not disappointed. The students were so attentive & food was delicious. Highly recommend.
Absolutely fantastic. Everything tasted like the best version possible. The rolls are like a pretzel croissant mix with a wonderfully buttery and salty flavor. The steak was outstanding, beyond tender and perfectly seasoned. It came on a bed of warm potato salad and creamed spinach, both were delicious. The creme brulee was out of this world, I don't think I will ever have a better version of that dessert. And the lemon poppyseed cake was perfectly balanced between sweet and tart with the poached rhubarb and honey ice cream. Cannot wait to eat here again.
