Located in Boulder, Colo., a noted food destination that is home to one of the nation’s top Farmer’s Markets, Jill’s Restaurant & Bistro offers a thoughtful menu featuring fresh, local and dynamic ingredients. The kitchen, helmed by Culinary Director, Laurent Mechin and Pastry Chef, Mark Metzger, sources its ingredients through partnerships with local farms, creameries and ranches, its own on-site garden and Boulder’s seasonal Farmer’s Market – conveniently located across the street – where the chefs procure the freshest herbs, vegetables and fruits. These ingredients are used to create scratch-made food, including pasta, bread, pastries, sauces, jus and more. Due to the handmade nature of the menu, dietary restrictions are easily accommodated, and a variety of vegan, vegetarian and gluten-free dishes are offered. The restaurant’s popular Tableside Service presents a modern and interactive take on a time-honored dining tradition, with a number of signature dishes prepared in dramatic tableside fashion, such as shrimp scampi, grass-fed beef on Himalayan rock salt, Café Diablo, and more. Weekly offerings at Jill’s Restaurant, such as its Ooh La La Lunch, Vegan Fridays and Sunday Brunch draw not only hotel guests, but also Boulderites and locals from neighboring towns. The beverage program is led by Sommelier Antoine Moinard and Beverage Director Bryan Amaro, and offers a curated selection of wines, local Colorado beer and spirits, alongside craft cocktails that incorporate ingredients from the on-site garden. Jill’s Restaurant can accommodate up to 115 seated guests in its dining room and more than 50 on its outdoor patio and terrace.
